What is specialty coffee?
Coffee is the seed of the coffee cherry. Coffee trees grow between the Tropic of Cancer and the Tropic of Capricorn. Specialty coffee grows best at high altitudes.
Harvesting Coffee
Coffee trees, which look more like a bush, begin producing fruit after about 3 to 5 years. The cherries are handpicked at their peak ripeness, with workers making several passes to ensure all cherries are harvested.
Processing
The skin and pulp of the cherry are removed using either a wet, dry, or semi-dry process. Each method produces different flavors in the finished product.
Sorting & grading
After a resting period, the green coffee beans are sorted and graded for purchase. They are bagged in large jute or burlap sacks and shipped to us.
Roasting & cupping
While preliminary cuppings are done starting at the farm, by our importers, and us, we cup our roasts daily in our facility to allow us to adjust our roast, bringing out certain flavors. This ensures that the beans we have received have the aroma, taste, and mouthfeel desired.

We roast our coffee 5 days a week at our facility in Wilmington, NC. This allows our cafes to serve coffee that was roasted just days before, ensuring a fresh, delicious cup! We even ship directly from our roastery to anywhere in the US!
